Dallas G. Hoover, Ph.D., CFS
Dallas G. Hoover, Ph.D., is a professor in the Department of Animal & Food Sciences at the University of Delaware, Newark. He joined the faculty there in 1984 following postdoctoral appointments at Drexel University and Cornell University.
He received his Ph.D. in food science from the University of Minnesota, his M.S. in biological sciences from the University of Delaware, and his B.S. in biology from Elizabethtown College (PA). Research areas include food safety and food process microbiology; courses currently taught include introductory food science classes and food microbiology. He is an IFT Fellow, and has chaired the IFT Nonthermal Processing Division and IFT Food Microbiology Division. He also is an associate editor of food engineering and physical processes for the Journal of Food Science and serves on several other editorial boards.
