Brian Farkas, PhD, CFS
Dr. Brian E. Farkas is Professor and Head of the Department of Food Science at Purdue University. He earned graduate degrees in engineering from the University of California at Davis and a bachelors degree in food science from the University of Delaware.
His research program uses engineering fundamentals, including transport phenomena, thermodynamics, and material properties, coupled with numerical simulation to study, develop, and optimize industrial scale production of foods. His current studies focus on surface and interfacial tensions at frying temperatures. Dr. Farkas and his students have published their research in over 50 peer-reviewed papers and delivered more than 80 poster and oral presentations around the world. He has received numerous awards including the IFT William V. Cruess award for teaching. He is a member of IFT, ASABE, AIChE, and ACS and has served on several advisory boards including the Board of Directors for IFT.
