Nonthermal processing technologies for purposes other than microbial inactivation - Symposium at this year's IFT Meeting

Everyone is talking about nonthermal technologies and mostly they are referring to their use for cold pasteurisation, i.e., inactivation of microorganisms. However, nonthermal technologies can do much more. In our symposium at this year’s IFT Annual Meeting in Session 117, at 10:30 am, Monday, July 15, in Room S502 at the McCormick Place Convention Center, you can hear about these alternative uses of nonthermal technologies. The session is titled "Applications of Novel Nonthermal Processing Technologies for the Extraction, Modification and Separation of Food Components".

Experts from across the globe will discuss the latest advances in novel nonthermal and chemical-free (green) processing technologies for extraction, separation and transformation of food components. These technologies are:

·         Ultrasound low/medium frequency extraction and structure modification and high frequency particle separation

·         Electrodialytic separations combined with ultrafiltration

·         Pulsed electric field extraction and product pretreatment

·         Shock waves for extraction and product modification
