Carole Tonello, applications & process development manager, Hiperbaric

  1. How did you get your start in the food science world?
    After my receiving my PhD in inactivation of microorganisms by high pressure processing (HPP), I started working in a technical center in France specializing in ... high pressure processing!

  2. What do you love about your job?
    I love the relationships I have with my customers and colleagues from different countries and cultures. My job combines science—because it is food science based—but it is also based on human relationship. I love being a part of the Hiperbaric team, where I work with very good people.

  3. What is the biggest challenge that you face in your job?
    We have to make HPP easier, understandable, and convincing to our customers but also explain the limitations of the technology. This is biggest challenge! Also, as a team leader, it is a challenge to keep my people happy, motivated, and efficient.

  4. What have you learned or been exposed to in the past 12 months that has helped you in your job?
    Questions that come from customers, colleagues, and food safety authorities make me think about the technology I am working with all of the time!

  5. How do you see the food industry evolving over the coming year?
    In the coming year, I think the trend of chilled food will continue and people be more and more concerned about quality. In Europe—where I live—perhaps more than in the United States, I feel people are more concerned by the increase in the number of those with cancer, and fear that one of the causes is the chemicals, ingredients, and pesticides in our food.

  6. Fun Fact: What’s your favorite food?
    My favorite food in general is vegetables. I really love the different textures, colors, and flavors. Super food!
