The Quest to Define and Develop Gluten Free

 
Gluten intolerance is believed to affect about one out of every 133 Americans and even more people are sensitive to gluten.  This lifelong condition has no cure and this market segment is no trend or passing fad.  The market for gluten-free foods and beverages in the U.S. currently stands at almost $700 million, and is due to reach around $1.7 billion by 2010.

The FDA is required to draft a proposed regulation in August 2006, and will be required to issue a final regulation by August 2008 to define the term ‘gluten-free' for voluntary use in food labeling. This webcast explores the regulatory and product development issues in addition to some perspective into Celiac Disease.
