Cynthia Kupper Gluten Intolerance Group
Cynthia Kupper is the Executive Director of the Gluten Intolerance Group of North America (GIG), a national non-profit organization supporting persons with gluten intolerances. As a clinical dietitian, she speaks internationally on celiac disease and the gluten-free diet at government and regulatory agency meetings, to the food and hospitality industries, health care professionals, and patient organizations. As part of her work with GIG, she initiated programs working with restaurants to provide gluten-free dining options, and the food industry in providing third-party gluten-free certification. She has also published a number of papers in peer-review journals, and authored a continuing education manual for dietitians.

Melinda Dennis, MS, RD, LDN, diagnosed with celiac disease 16 years ago, is a registered dietitian who specializes in celiac disease at Beth Israel Deaconess Medical Center in Boston . She is the Nutrition Coordinator and a research investigator of the hospital’s Celiac Center and is the author of several journal articles on the nutritional management of celiac disease. Melinda is the founder, former chairperson and current Nutrition Advisor to the Healthy Villi Greater Boston Celiac/DH Support Group. She offers nationwide lecturing, gluten-free classes, shopping tours and home visits for those following the gluten-free diet through her nutrition consulting service, Delete the Wheat, www.deletethewheat.com.
