At NASA, I have managed the food science research since 2000 with the emphasis to provide technologies for a Mars mission. I was also the Shuttle Food System Manager until its retirement. I have lived in Houston TX for over 25 years.
Lauren Pecukonis Food Technologist U.S. Army Natick Soldier RD&E Center
Lauren Pecukonis is a Food Technologist at U.S. Army Natick where she works mostly on using hurdle technology to provide high quality rations for the Warfighters. She looks at both product development as well as novel processing techniques. Lauren's special interests include nutraceuticals, lipid oxidation, as well as alternative, non-thermal processing methods. Lauren has experience with product development and processing methods regarding soybean products (i.e. soymilk and tofu), as well as mustard, vinegar, salad dressings, mayonnaise, and other sauces. She graduated from Framingham State University with a degree in Food Science & Technology and has always had in interest in product development
