Gale Prince, Retired, The Kroger Company Gale Prince is a 40 year veteran of the food industry, first with Jewel and then as the Director of Corporate Regulatory Affairs with The Kroger Company, responsible for regulatory matters related to food and product safety and crisis management issues related to product safety for manufacturing plants and retail stores. Gale has been involved in literally thousands of product recalls, and heads a panel IFT has assembled in support of our FDA contract work on traceability. He is currently President of SAGE, LLC consulting.
Stephen Arens, GS1 USSteve Arens manages various industry initiatives for GS1 US, the standards development and management organization responsible for the promotion and use of the GS1 System in the United States. His current responsibilities include GS1 US’ work enhancing the consumer coupon system, its work with the United Nations, its work with the produce and foodservice industries and he serves as the Executive Director of the Alcohol Beverage Industry Electronic Commerce Council. Steve also is working with the Department of Homeland Security and other government agencies as they design U.S. Customs’ new information management system to manage the inspection of imports. He has worked with a number of leading food and beverage suppliers, retailers and foodservice firms in their efforts to make their supply chains and business processes more efficient through the implementation and use of GS1 Standards. Prior to joining GS1 US, Steve worked for several leading marketing research and information firms. He holds a BS in Marketing and a MBA in Systems Management.
Jim Dar, Allen Flavors, Inc. Jim Dar is currently Director of Technical and Manufacturing with Allen Flavors, Inc. servicing their largest customer, Arizona Beverages, Inc. He has over 25 years of experience in the food industry with major corporations such as General Foods/ Kraft Foods, CPC International, and McCormick and Company. Dar has implemented food processing, packaging and quality assurance projects worldwide. He has a BS and MS in Chemical Engineering and Chemistry, and holds two patents related to food products. He has been an IFT member for over 25 years and is a member of the Food Packaging and Fermented Foods Divisions and Past chair of the Maryland Section of IFT.
Will Daniels, Earthbound Farm Will Daniels has been with Earthbound Farm since 1999. He has helped the company grow from a small, regional salad producer to the nation’s largest grower, packer and shipper of organic produce. As Earthbound Farm’s Vice President of Quality, Food Safety and Organic Integrity, Daniels is responsible for food safety, food quality and an organic integrity program. An active leader in the organic industry, Will serves on the board of directors of California Certified Organic Farmers as Chair. He also serves on the board of directors for the California Leafy Greens Marketing Agreement as well as numerous technical committees with California and Arizona’s Leafy Greens Marketing Agreement, the United Fresh Produce Association, the UC Davis Center for Produce Safety and the Organic Trade Association. Prior to working with Earthbound Farm, Will had his own food service consulting company where he worked on projects in menu revision, nutrition and food safety. He graduated from California Polytechnic State University, San Luis Obispo with a bachelor of science in nutrition. In his free time, Daniels likes to cook — he makes a mean barbecue sauce — and enjoys spending time with his wife and daughters.

Gale Prince
Gale Prince is president of SAGE Food Safety Consultants, LLC, a firm specializing in assisting industry in preventing food safety problems through program review from procurement through consumer complaints. He brings broad experience in problem solving from managing product recalls to handling major disasters and consultation involving litigation on food safety issues Gale’s forty years of work experience in Food Safety, Quality Control, Sanitation, Food Labeling, Workplace Safety and Regulatory Compliance Programs have included the following types of operations: Fresh and Processed Meat, Fresh Fruits and Vegetables, Bakeries, Milk and Ice Cream Processing, Cereal Grains, Pet Food, Canned Foods, Frozen Foods, Bottled Water, Food Packaging Materials, Food Service, Retail Food Stores, Food Transportation, Non-Foods, Over the Counter Drugs and Sanitary Design of Food Equipment. Gale has also managed several thousand product recalls during his career and has completed specialized training under Food and Drug Law – How to testify as an Expert Witness. Gale is currently a member of the Institute of Food Technologists, the Association of Food and Drug Officials, and the International Association for Food Protection (formerly IAMFES) and he continues to serve on numerous organizational committees in the food industry. Gale is the recipient of numerous awards from the Association of Food & Drug Officials, the United States Food & Drug Administration, and the International Association of Food Protection.
