The Protective Antioxidant Effect of Tropical Fruits

This session will discuss the strengths and limitations of current methodologies to elucidate the role of antioxidants in chronic disease prevention. Specifically, it will cover findings from in vitro examination of the antioxidant capacity of 35 common tropical fruits for Costa Rica in human red blood cells. Finally, the session will address how to implement technologies of membranes and enzymes to increase the extraction and preservation of phenolic compounds in fruit juices and fruit extracts.
