GRAS botanicals, spices and herbs offer functional health benefits to help you develop innovative products. Botanicals boast many compounds that support functional health and can be delivered without altering flavor profiles of products. Historical and new clinical evidence also suggests that spices and herbs have health benefits (including heart health) in addition to their flavor enhancing role. These ingredients can be used to replace less-desirable ones (salt, wheat, preservatives) and are considered all-natural. This session will explore how these ingredients are ideal for new and reformulated foods.
Angela Dorsey-Kockler, R.D., M.B.A., Product Manager, BI Nutraceuticals
Angela Dorsey-Kockler's experience as a registered dietitian in the food and nutrition Industry spans the public health, sales, and marketing arenas. As product manager for BI Nutraceuticals, she coordinates a large portfolio of botanical herbs and nutritional ingredients, positioning them for both the food and dietary supplement markets. Mrs. Kockler holds a master's degree in business administration from the University of California at Berkeley.
David Heber, Ph.D., M.D., Professor of Medicine, UCLA Center for Human Nutrition
Dr. David Heber is the founding director of the University of California at Los Angeles (UCLA) Center for Human Nutrition, professor of Medicine and Public Health, and founding chief of the Division of Clinical Nutrition in the Department of Medicine, David Geffen School of Medicine at UCLA. He is the director of the Certification Board for Nutrition Specialists of the American Society for Nutrition, and past chair of the Education Committee and the Medical Nutrition Council of the American Society for Nutrition. He has written over 200 peer-reviewed scientific articles and 60 book chapters, and is listed in the Best Doctors in America, a peer-reviewed survey of more than 35,000 doctors throughout the nation. Dr. Heber's research interests are the treatment of obesity, and the role of nutrition in cancer prevention and treatment.

His broad formulary knowledge of the application of spices, herbs, and their extracts in marinades, batters, breadings, and snack seasoning systems has facilitated the successful development of a wide range of seasoning profiles. Mr. Serrano leads the innovation efforts at McCormick, creating and implementing new ingredients around health and wellness applications, including savory systems and beverages.
