The Institute of
Food Technologists recognizes the significant health and economic impact that H5N1 Avian Influenza (commonly referred to as “Avian Flu” or “AI”) has had worldwide, especially in Asia and Africa. There are concerns
that AI may be introduced to the Americas via bird migration or,
more likely, human transport of birds and materials. Should AI spread, it would
pose a significant threat to the North American poultry industry, the safety and
stability of the food supply, and to animal and human
health.
