Symposium will focus on the use of calorie-reduced ingredients that replace major food components and how they can be labeled. The speakers will discuss consumer desires regarding reduced fat and reduced calorie foods, and how to inform consumers about calorie-reduced ingredients, as well as the regulatory issues that relate to partially available macronutrients.
