Chicago-style hot dogs, deep dish pizzas, and Italian beef sandwiches are iconic foods of the Windy City. And while they are not the healthiest of foods that meet today’s wellness trends, I can manage to find some aspect in them to ease my guilt each time I consume them on almost every single one of my trips back to Chicago. The sport peppers and bright green relish could add some nutritious component to a hot dog; lycopene in the tomato sauce of pizza provides some antioxidant content; and beef does satisfy the need for protein. Sure, these are most likely outweighed by the number of calories and high fat content, but I remain loyal to my Chicago staples.

Whole food nutrition, antioxidants, and protein will be definite parts of this year’s IFT food expo. In addition to these, today’s trends of transparency, wholesome nutrition, less processed, and overall wellness are all addressed on both the expo floor as well as in the scientific and applied sessions. For instance, session 040, “A Dietary Staple for the 21st Century: Celebrating 2016, the International Year of Pulses,” which will take place from 10:30 a.m. to noon on Monday, July 18, is a perfect example of one that will address whole food nutrition. The little pulse is a nutrient-dense source of protein, fiber, and bioactive compounds. In addition, research is looking into diets including pulses and the benefits in weight management and cardiovascular health that they offer.

On the food expo floor, today’s nutritious ingredients take center stage. Past shows have seen the rise in popularity of ingredients like omega-3 fatty acids, botanicals, and vitamin D. This year, those ingredients’ staying power as well as some of today’s rising stars will be showcased in various snacks, foods, and beverages. Here is an overview of some of the functional ingredients and services attendees will be able to find.

ANTIOXIDANTS
Popular antioxidants like beta-carotene, lutein, vitamin C, and vitamin E help promote health in various areas, such as immunity, eye health, cardiovascular, and overall wellness. Lycopene, for example, will be discussed in session 112, “Health Benefits of Whole Foods and Molecular Targets of Bioactive Components: Part 2,” which will take place from 1 p.m. to 2 p.m. on Monday, July 18. Lycopene, an antioxidant present in whole tomatoes, is believed to contribute to a reduced risk of prostate cancer.

A CAROTENOID FORMULATIONS line includes beta-carotene, apocarotenal, lycopene, lutein, and canthaxanthin. Allied Biotech Corp., “The Carotenoid Company,” will be focusing on two growing global concerns: sustainability and clean labels. The company will introduce a new line of “palm-free” formulations in response to the growing concerns regarding sustainable sourcing of palm oil. PROBIOTICS
Consumers have added probiotics to their list of wholesome ingredients that they seek in their foods and beverages. With digestive health and immune health more common health concerns, probiotics are no longer associated with just yogurt, but are being added to a growing variety of foods and beverages.

THE NUMBER OF probiotic product launches continues to increase. The importance of adding lean protein to diets has contributed to the growing number of novel alternative protein sources. Last year, pea protein was a star of the food expo alongside the more mainstream whey and soy proteins.
