Scholarship RecipientKelsey Ryan is currently researching the modification of whey proteins for use in beverages.

So, how exactly did Kelsey embark in a career in food science? “A friend in high school informed me of food science. I immediately knew this career was for me. Food science is appealing since you are able to improve existing products and create new, high quality, safe and nutritious food.”

As an undergraduate at Purdue University, Kelsey participated in the Cornell Food Science Summer Scholars program. She also interned in the research and development divisions at General Mills and Heinz North America.

Did Kelsey have a mentor in college? Yes, two mentors encouraged Kelsey throughout her academic studies: Dan Kennedy, an active member of the Minnesota Section IFT and Dr. Pam Ismail at Purdue University. “Dan is a great mentor because he has shown me the importance of networking and being active in groups and activities. Dr. Pam Ismail shared her love of research with me.”

Kelsey wholeheartedly recommends the IFT Foundation Scholarship Program. “Just know there are a variety of career options in food science. Be sure to talk to different people in your department, talk to alumni and talk to IFT members.”
