Traceability and Food Safety Systems

This webcast is in partnership with and organized by the IFT Washington DC Section.  Traceability is a new regulatory imperative of the Food Safety Modernization Act. As FDA develops implementing guidelines, the industry is collaborating to develop background and guidance information to better inform development of regulations.

A perspective on industry participation in development of international standards and guidance for the use of traceability in trade will be provided along with an overview of the IFT work programs on traceability including the role of IFT in the FDA pilot program.

Elisa Elliot

Elisa Elliot is in the Signals and Surveillance Team of the FDA Coordinated Outbreak Response and Evaluation (CORE) Network, in the Center for Food Safety and Applied Nutrition. Her responsibilities include foodborne outbreak signal detection and leading the Healthy People Food Safety Work Group. She attended Texas A & M University and received a B.S. degree in Microbiology from Texas Tech University. She received her Ph.D. in Microbiology from the University of Maryland. She was Assistant Professor of Seafood Microbiology at the Fishery Industrial Technology Center of the University of Alaska, in Kodiak, AK, studying the effects of processing and freezing on microorganisms in pollock surimi. At the USDA Food Safety and Inspection Service she developed methods for Listeria monocytogenes and Clostridium botulinum. She taught microbiology at University of Maryland University College. Dr. Elliot began her career with FDA as a researcher developing methods for Vibrio species.

Dr Janet E Collins

Janet E. Collins, Ph.D., R.D. currently serves as the Global Biotechnology Manager, Government Affairs Lead, and Ag Policy Manager for the DuPont Company, and is based in their Government Affairs office in Washington DC. Janet’s responsibilities include serving as the policy lead for DuPont, and its agricultural business Pioneer Hi-Bred in international organizations with focus on agricultural biotechnology. Organizational oversight includes Codex Alimentarius, Cartagena Protocol on Biodiversity, Organization of Economic Cooperation and Development, International Standards Organization and others as identified by the businesses. As GA lead for the Ag and Nutrition Platform of DuPont, Dr. Collins also serves as liaison between the GA function for the US within the global organization, and directs the business functions within the State government affairs organization. Within DuPont, the agriculture and nutrition platform includes businesses in various areas including seeds and traits, nutrition and soy ingredients, and crop protection chemicals. Janet is a food scientist and nutritionist, with policy experience relating to food safety assessment, food labeling and health claims, nutritional contribution of foods and dietary exposure assessment, and agricultural biotechnology issues working in the regulatory affairs group at Monsanto, and also in the regulatory and scientific affairs functions of meat and dairy trade associations.

Jennifer C McEntire

Jennifer Cleveland McEntire is a Sr Director at Leavitt Partners. Prior to joining Leavitt Partners, Jennifer served as Senior Staff Scientist and Director of Science and Technology Projects with the Institute of Food Technologists with responsibility for grant and contract work. A food microbiologist by training, she leds IFT tasks in the areas of  food defense, product tracing, and other work related to food safety. Dr. McEntire received her BS with Distinction in Agriculture (magna cum laude, majoring in Food Science) from the University of Delaware. She conducted her doctoral work in the Department of Food Science at Rutgers University as a USDA National Needs Fellow in Food Safety, which provided the opportunity to complete internships at the National Food Processors Association (now GMA), and Center for Food Safety and Applied Nutrition at the FDA. She has authored or co-authored several peer reviewed publications, several book chapters, has provided Congressional briefings and testimony to federal agencies, and has presented her work nationally and internationally. She continues to serve as an IFT spokesperson to the media on food safety and defense related issues.
