Heart Healthy Product Development Competition

The Heart-Healthy Product Development Competition finals, sponsored by CanolaInfo, were once again be held at Wellness.
Designed to illustrate how the food industry is positioning itself to help consumers comply with the Dietary Guidelines for Americans, the Heart-Healthy Product Development Competition challenged students to compete in developing heart-healthy food products low in saturated fat, and free of trans fat. Products had to meet certain nutritional criteria based on U.S. Food and Drug Administration food labeling guidelines.
This year's winners, and their product innovations, are as follows:
First Place: Rutgers University
Heartmony: A snack harmonizing the crunchiness of crackers with the creaminess of a dip. The crackers are made from a blend of rye, oat, chia, and flaxseeds. The edamame-spinach based dip bursts with a flavor of freshness from kombu seaweed.

Second Place: California Polytechnic State University, San Luis, Obispo
Demergo: How would you like to sink a crispy, rosemary-infused cracker into a creamy, Mediterranean cauliflower spread without the high salt and fat content associated with traditional chips and dip? Demergo, meaning to sink in, completes that task while pleasing taste buds and satisfying daily nutrient intake requirements making it a delicious and nutritious heart healthy snack.
