Jacqueline Beckley, founder of The Understanding & Insight Group LLC will present the results of a thirty year quest to understand the role of texture in people’s lives.  She will take you on a journey that starts in the 1980’s in Chicago while observing product and people data from research on ready–to–eat cereal, through watching choices global consumers make when picking highly desirable food products to the pioneering work that she and Dr. Melissa Jeltema have been working on for the last 14 years.  Their findings – Mouth Behavior and the tool they have created called JBMB™ Typing Tool will provide you with insights into some of the product design and development dilemmas you have been working with in your labs. 

Mary Lynne Shafer and Erhan Yildiz from Ingredion will continue the learning through demonstrations of how you can take the concept of mouth behavior and apply it to products to create innovations that are both design and consumer centric.
