Message from the Chair

Hope you all had a wonderful holiday season and are enjoying a Happy New Year.

 

We had such a wonderful December holiday event at Hayden’s Lakefront Grill on December 8th 2009. The food was excellent and the venue perfect. Many thanks to Arrangements Chair Sharon McFadden for a job well done. During the section meeting we collected and were able to contribute almost 350 lbs of food for the Oregon Food Bank and through the generosity of the membership we also gave $3200.00 in Cash Donations, $1000.00 of that was donated by OSIFT. Mike Moran of the OFB gave us a short talk on the mission and scope of the OFB and thanked us all for our efforts.

 

We look forward to seeing all of you at the Tuesday, February 2, 2010 OSIFT meeting held at Eola Wine Cellars in Rickreall. The venue, food and wine are excellent and we always enjoy ourselves. We have special guest speaker this month, Jennifer Fideler and we will hear all about her work internship in Ecuador and get to enjoy some Ecuadorian chocolate. Jennifer was one of the Students that received the OSIFT scholarship in 2009 and we are anxious to hear of her work experience and travels.

 

If you haven’t yet, please make arrangements to attend the Food Ingredient eXpo FIX event, held at the Double Tree Hotel - Lloyd Center on Monday, February 22, 2010 between 1 PM and 7 PM. The Technical Session begins at 1:00 PM and goes to 4:30 PM and includes the following eclectic speakers which will hold your attention. Between 1-1:50 PM Jeff Cawley, VP Business Development for NW Analytical, will give his presentation on the Global Food Safety Initiative Management Systems and What They Mean to Your Operation and Your Business. Between 2-2:50 PM Pam Vaillancourt, VP Business Development for Product Dynamics (Division of RQA), will give her presentation on Recalls and Retrievals—Are You Ready and You Can be Ready! Culminating in the last technical speaker between 3-3:50 PM Steven Lauro, General Manager, ColorMaker, will present information on Replacing Synthetic Color Additives with Naturally Derived Colors.

 

At 4 PM OSIFT has a special guest speaker for your listening pleasure. National IFT President Marian Gillette will step up to the podium for a special talk and to share her IFT enthusiasm. Welcome to Oregon and OSIFT  Madam President!!!

Cocoa Processing in Ecuador, Experiences from a Study Abroad

Jennifer Fideler

 

Jennifer Fideler is from Beaverton, Oregon and is currently a senior in Food Science and Technology at Oregon State University with plans to graduate in December 2010. She holds minors in chemistry and Spanish and has recently studied in Quito, Ecuador, completing an internship with Dr. Eduardo Uzcategui of the Universidad San Francisco de Quito (USFQ) researching cocoa fermentation and artisan chocolate processing. Jennifer plans to attend graduate school and continue studies in chocolate.
 

Jennifer will present a summary of her study abroad experience and internship in Ecuador and explain the process of chocolate making. In addition, she will discuss the significance of gaining an international perspective on food science. Ecuadorian chocolate will be available to sample.
