CheesesLegend has it that an Arab nomad made the first cheese. He put his supply of milk in a pouch made from a sheep’s stomach before he set out across the hot dessert. The heat of the sun and the rennet in the lining of the pouch caused the milk to coagulate and separate into curd and whey.
