The first edition of this book was based on authors’ notes used to teach advanced nutrition at the university level. The second edition is expanded and contains new and updated information on food sources of nutrients, effects of cooking, new approved carbohydrate and fat substitutes, and the newest dietary recommendations. It is still intended as a textbook, but will also be very useful as a reference book.

It provides an in-depth coverage of carbohydrates, lipids, and proteins as energy sources; vitamins and minerals as catalysts; and water labeled as “the most important nutrient” because of its role as a universal solvent. This is followed by detailed information on nutrient digestion and absorption, cellular metabolism in plants and animals, catabolic and anabolic pathways in energy utilization, and role of nucleic acids, genes, and protein synthesis. The authors have included here a chapter on free radicals, lipid peroxidation, and antioxidants—topics not often addressed in texts dealing with nutrition. Very useful is the chapter on interactions between medications and nutrients/foods, with information summarized in a three-page table.

This book is not for a layman interested in nutrition. The user is expected to have a good grasp of chemistry, especially organic chemistry. Frequent references are made to the periodic table, particularly in the coverage of the functionality of specific minerals. Fortunately for those who need it, one of the appendices provides a refresher course on the involved principles.

There are many useful schematics, chemical structures, tables, and graphs, and the book goes into considerable detail in the covered subjects. It meets admirably the purpose for which it is intended.
