KELCOGEL MA-60 Gellan Gum acts as an alternative to methylcellulose. For extra juiciness, GENU Pectin MA-50 can be used in combination with KELCOGEL MA-60 Gellan Gum or another gelling agent. The pectin is upcycled from spent citrus peels, a byproduct of the juice industry. GENU Texturizer MA-1 is a multifunctional solution that provides juicy texture as well as both hot and cold bite, enabling a more robust formulation and a meat-like eating experience, CP Kelco reports. It is a blend of carrageenan extracted from red seaweed and methylcellulose. NUTRAVA Citrus Fiber is a label-friendly fiber ingredient that enables starch replacement in plant-based meat alternatives.

Pharmactive Biotech Products introduced Aged Black Garlic+ (ABG+), which has a sweet, “social” flavor that is odor-free and thus suitable for functional gummies. Traditionally, it is produced by aging whole bulbs of a selected Spanish species of fresh garlic at high humidity and low temperatures for several weeks. ABG+ is produced using the company’s proprietary ABG Cool-Tech aging technique. ABG+’s primary active ingredient, S-allyl cysteine, is relatively stable, allowing it to be incorporated during the mixing stage of gummy ingredients, just before setting. This ensures that each gummy will contain a precise portion of the 250 mg recommended daily dose. ABG+ has claims for cardiovascular health, cholesterol, immunology, and antioxidant properties pending with the European Food Safety Authority.

Paul N. Gardner USA (GARDCO) introduced a compact, portable pocket scale, built with a precision sensor system and high accuracy and made of high-quality ABS plastic with magnets and an anti-slip design. It conveniently closes up in a protective case, making it suitable for use in the field. It features six units of measurement (g, oz, gn, ct, dwt, ozt), has a 1,000-g max weight capacity, and reads weights in increments of 0.1 g. The minimum weight recommendation is 0.3 g. Its tare function, which allows the user to subtract the weight of the container, makes it easy to obtain accurate readouts.

Cargill Offers New Sweetener System

Cargill’s new sweetener system, EverSweet + ClearFlo, brings together the company’s stevia sweetener with a natural flavor, a combination that provides benefits that include flavor modification, improved solubility and stability in formulations, and faster dissolution.

Using EverSweet’s quick sweetness onset and high sweetness potency as a foundation, EverSweet + ClearFlo goes a step further to create an even more sugar-like experience, especially at higher concentrations. This new sweetening system also helps manage off-flavors from other ingredients, be it earthy notes from proteins, bitterness from caffeine, or metallic tastes from potassium chloride.

EverSweet + ClearFlo dramatically boosts solubility, enabling far more concentrated solutions than Reb M alone. The improved solubility opens the door for stevia to be used in applications like foodservice fountain drinks and flavor syrups. The new sweetener system also results in improved dissolution properties. Unlike standalone Reb M sweeteners, EverSweet + ClearFlo dissolves in water at ambient temperatures with no heating required.
