In spite of continuing pressure from consumer advocate groups to the contrary, food additives continue to be used extensively to optimize nutritional and sensory quality of foods as well as contributing to their safety.

The second edition of this valuable text is the work of the same editors as the first edition, with the addition of Thorngate. It maintains the same comprehensive approach to the subject, while including chapters on several additional classes of additives such as colorants, anti-browning agents, commercial starches, essential fatty acids, phosphates, and fat replacers, and discussing food additives for special dietary purposes such as functional foods, engineering of clinical nutrition products, and probiotics. The original discussions of intake assessments, risks and benefits, and hypersensitivity have been updated, and new chapters have been included on the effect of additives on behavior, learning, activity, and sleep problems in children, as well as on consumer attitudes.

Global food distribution has led to the need for countries to adopt similar food additive regulations. Two most useful chapters review such regulations in the European Union and the United States. The global approach to the subject of food additives adopted by the editors is reflected in the international make-up of the contributing authors, who come from 10 countries.

The book comprises 25 chapters, each containing an extensive list of references, and two useful appendices. Appendix 1 lists functional classes, definitions, and technological functions. Appendix 2 lists the international numbering system for the additives adapted from Codex Alimentarius.
