Differences in meat myofibrillar proteins and plant-based globular proteins can create formulation challenges in plant-based meat substitutes. Mechanical processing is not enough to overcome the challenges of texture and taste in plant-based proteins.
Innophos released its latest white paper, “Solutions for Plant-Based Meat Substitutes,” which presents case studies that showcase how the right phosphate and protein combinations can improve the texture and taste of plant-based meat substitute products. The white paper details the impact of phosphate technologies on texture in a variety of meat substitutes.
RESEARCH
Clasado Biosciences has shared results of a study conducted by Nottingham Trent University in collaboration with Clasado that illustrates the potential role of prebiotics in supporting the health of elite athletes.
The study utilized a randomized controlled methodology to measure the effects of a 24-week prebiotic (Bimuno GOS) intervention on markers of immunity, upper respiratory symptoms, and gastrointestinal symptoms in rugby players. The study showed that the supplementation reduced the duration of upper respiratory symptoms as well as the incidence and severity of gastrointestinal symptoms.

GoodMills Innovation launched VITATEX Vegan Snack Mix, a novel premix for burgers and meatballs, as well as savory bakery and snack fillings, based on wheat proteins. The mix has been specially adapted for production in the bakery and impresses with its ease of processing. Manufacturers who want to give their products an individual touch can refine the mixture with additional spices or fresh ingredients.
Grain Processing Corporation introduced FYBRIN RS resistant starch, a new corn-based resistant starch that is an inherently gluten-free dietary fiber ingredient with minimal calories. When used in food formulations, FYBRIN RS can boost the nutritional value by increasing fiber while contributing fewer calories than other carbohydrates, supporting both “added fiber” and “lower calorie” label claims. Recognized as dietary fiber by the U.S. Food and Drug Administration, FYBRIN RS will be labeled as “food starch-modified.” As a resistant starch, it is a prebiotic or nondigestible food ingredient that supports good gut health.
Chinova Bioworks introduced Mycobrio, a dual-functioning, mushroom-derived fining agent and natural preservation ingredient formulated specifically for the alcoholic beverage and low-alcohol/no-alcohol beverage markets. Mycobrio is a natural, liquid chitosan fiber extract derived from the stems of white button mushrooms and formulated to replace synthetic and animal-derived fining agents traditionally used in fermented drinks. It also provides broad spectrum protection against spoilage as a natural antimicrobial agent in wines, beers, ciders, and seltzers.
Hydrosol, a specialist in stabilizing and texturing systems, has introduced a new line of Homemade compounds suitable for use in dairy and deli foods in response to heightened consumer interest in home cooking. As the company developed the line, the Hydrosol team targeted the products for use at a kitchen scale versus industrial scale and adapted the formulations accordingly.
Hydrosol offers two different kinds of compounds: all-in and integrated. The all-in compounds contain all the ingredients, including colorings, flavorings, and seasonings. Manufacturers just need to fill the compounds into their own packaging and market them to the trade. With the integrated compounds, Hydrosol supplies all the necessary stabilizing ingredients. The customer then adds certain components.
The Homemade line currently comprises seven product concepts, including a compound for vanilla pudding, a system that can be used for making mousse, a system for ice cream, and several different sauces for deli applications.
Nektium released an organic version of its elderberry extract as consumer demand for natural ingredients with antiviral properties continues to rise. To meet demand for more concentrated extracts, Nektium is also adding a new grade of its elderberry line, which contains 10% anthocyanins. The 10% variant will join the existing 6% grade in the company’s portfolio, which will now also be available in organic form for the first time. Nektium’s elderberry portfolio comprises ingredients made from black elderberry (Sambucus nigra), which has been scientifically proven to effectively treat upper respiratory symptoms. Nektium is represented in North America by PLT.
INDUSTRY UPDATE
Stable blood glucose levels prevent insulin peaks, contribute to a prolonged feeling of satiety, and thus lower food intake. A clinical study confirmed that the resistant wheat starch, Lory Starch Elara (Loryma) has only a minor effect on glucose levels. The study was commissioned by Loryma and was carried out by the ZIEL Institute for Food & Health at the Technical University of Munich. The study gave the glycaemic index equivalent (GIÄ) for Lory Starch Elara a value of 4, which is significantly lower than the comparative value for native wheat starch (50 GIÄ). The reference is glucose (100 GIÄ).
AgriFiber Solutions’ portfolio of insoluble fiber ingredients now offers formulators of meat and dairy alternative products an opportunity to include a new claim to their product labels: Upcycled Certified. The insoluble fiber ingredients, like pre-gelled, multi-functional corn and oat ingredients, are clean label alternatives to uphold texture and mouthfeel in plant-based meat alternative formulations.
Infinome Biosciences, a next generation biomanufacturing company, and Kalsec announced a new partnership to sustainably develop and commercialize multiple precision fermentation products. The partnership will deliver naturally produced, highly innovative ingredients with superior quality and consistency. Infinome’s GenoScaler is a proprietary, ultra-high-throughput, CRISPR-enabled strain engineering platform designed to rapidly optimize microbial strains with vastly improved traits and productivities. Infinome will employ GenoScaler to develop ingredient-producing strains and provide Kalsec with these ingredients to validate their performance in food applications.
J. M. Huber Corp. signed a binding agreement to acquire full control of the Biolchim Group from NB Renaissance, Chequers Capital, and the Biolchim Group management team. The Biolchim Group, managed and headed by Galileo Quattro SARL, has its main operating base in Italy and is a producer and distributor of a full range of specialty plant nutrition products and biostimulants. Closing of the sale is anticipated by the end of 2022 subject to customary closing conditions, including foreign direct investment approval in Italy.

TopGum Industries, a producer of functional gummies, announced its new designation as a USDA-certified organic manufacturer of gummies. Following an audit of its facility and production systems by an authorized international organic certifier, the new seal confirms the company’s commitment to sourcing, processing, and manufacturing certified organic, non-GMO products that conform to the standards established by the USDA’s National Organic Program.
Tate & Lyle PLC, in partnership with APC Microbiome Ireland, a Science Foundation Ireland Research Centre, announced the publication of its jointly filed international patent application for a synbiotic fiber technology that has shown positive preliminary results in metabolic health. The technology, which combines Tate & Lyle’s proprietary PROMITOR fiber, and a Lactobacillus strain, has shown substantial and promising cardiometabolic health benefits.
