Sodium Reduction Solution, New Ingredients, and More
Sodium Reduction Solution
According to a World Health Organization (WHO) report on sodium levels, savory snacks are ranked within the top five food categories being targeted by WHO members for salt reduction. While the global WHO benchmark for snacks is 500 mg per 100 g in potato-based chips, (pretzels are higher in sodium at 720 mg per 100 g), many countries exceed those targets.
Kerry’s Tastesense Salt solutions deliver on salt and rich savory taste without adding sodium by retaining essential flavor properties and replicating salty impact, body, and linger. Available both as a singular solution for salted crisps and as part of more complex snack seasoning formulations, Tastesense Salt is supported by strong fundamental science that links taste receptors with proprietary product chemistry, salt morphology, proteolysis, and fermentation. Kerry’s proprietary in-house capabilities allow it to design multidimensional, novel taste ingredients from natural botanical extracts, peptides, and ferments (yeast- and non-yeast-based), as well as various byproducts from valorization streams.

BENEO addressed sustainability with the installation of new equipment at its rice ingredients plant in Wijgmaal, Belgium. Thanks to a large-scale industrial heat pump supplied by Heaten, a specialist in industrial heat pump solutions, the company will be able to recover energy from wastewater to reduce its CO2 emissions. State-of-the-art technology used by the heat pump allows the energy from the wastewater to increase to a level that is high enough to contribute to the drying process of rice starch or rice protein. In this way, the new installation will help to significantly reduce the company’s natural gas consumption, and therefore, its CO2 emissions.

Regeneration Rising
A new era of conscious consumption, described by GNT as “Regeneration Rising,” is creating a shift toward more sustainable ingredients and eye-catching color palettes influenced by the natural world. This trend explores the growing global appreciation for the natural world and desire to protect the planet, intensifying the focus on the origins of raw materials and sustainable production.
The “Regeneration Rising” trend is also inspiring new color palettes as brands seek to convey instinctive messages about how their products are created. GNT identified three new color directions in line with the trend. “Elevated Earth” involves earthy shades from red-browns and warm oranges to textured purples and inky teals, elevating products with an organic but premium look and feel. “Nature Lab” is about pushing the boundaries of what is considered natural and features a kaleidoscopic spectrum of green, pink, red, yellow, orange, and blue. “Wholesome Nostalgia” features yellows, greens, blues, peaches, and pinks that range from velvet-like to milky, translucent, muted, and dreamlike.
