A day in the life of a food scientist
What is it really like to be a food scientist? What do food scientists do each day? In 2010, IFT launched “A Day in the Life of a Food Scientist” video series to recognize the value of food science by taking a closer look at a day in the life of interesting individuals in the profession. Recently, IFT partnered with Disney Consumer Products (DCP) to raise the visibility of food science careers and the innovative potential of the profession to develop healthy and nutritious foods. This video showcases some of the Disney food scientists and what their day-to-day work entails.

Face-to-Face: Meet Luis Fernandez
In this month’s Face-to-Face series, we will be introducing you to Luis Fernandez, Applications Technology Leader Europe at Cargill Co. and IFT Fellow. Luis began his career in food science while getting his degrees at the University of Buenos Aires in Argentina, and since then has lived and worked around the world. Today, he oversees 100+ technologists involved in different application categories (bakery, confectionery, beverage, dairy, frozen desserts, meat, fruit, and convenience foods). Learn what Luis has acquired from his vast food technology experience in IFT’s Face-to-Face.

Food Allergens—Regulations, Risks, and Controls
This online course will review the importance of allergens and the latest information and technologies for identification and control practices. Global regulations and the risk in the global food supply, along with new disclosures will be examined, as well as allergen labeling requirements and ramifications. Detection methods, cleaning and sanitation, and labeling control in plants are just some of the practices to be covered. Best practices in managing communication to consumers will also be presented. This course will feature live virtual Q&A sessions with content experts starting in October 2011.

The future of the Food Safety Modernization Act
In January, President Obama signed a $1.4 billion overhaul of the nation’s food safety system with the Food Safety Modernization Act. Recently, Kelly Hensel, Digital Media Editor at IFT, spoke with John Bode, a Washington, D.C. attorney, to discuss that sweeping legislation, what progress we have seen since it was signed into law, how the U.S. debt crisis may affect its implementation, and what the future holds. Bode was deeply involved in development of the Act, as well as every other major change in federal food law over the past 25 years.
