When Color Meets Flavor

The shift away from artificial additives is fueling innovation with ingredients that deliver both natural color and flavor.

As consumers push harder for transparency and clean labels, one of the biggest shifts shaping product development is the accelerated move away from artificial colors and flavors.

“Consumers are placing greater emphasis than ever on transparency and clean labels. They want to know exactly what’s in their products and where it comes from,” says Kelli Heinz, vice president of marketing and industry affairs, Bell Flavors & Fragrances.

As brands move away from synthetic dyes, “we can expect more opportunities to experiment with natural colors and flavors, which could inspire a wave of ingredient innovation,” says Philip Caputo, marketing and consumer insights manager, Virginia Dare.

That innovation is taking intriguing forms. Rebecca Peizer, owner of All Things Culinary, asks: “How can we add flavor to our color, and how can our color add flavor versus just being for the sake of color?” She points to hibiscus, which provides a vibrant red hue along with a tart, floral note, and black sesame paste, which delivers both deep color and rich, nutty flavor along with protein and healthy fats.

These kinds of dual-purpose ingredients are gaining traction as developers rethink formulation strategies to satisfy both consumer expectations and sensory appeal. By linking color with flavor and nutrition, product innovators can create offerings that resonate on multiple levels—clean label, visual interest, and taste.

The move toward natural colors is more than a reformulation trend. It signals a broader shift in how ingredients are selected and showcased, opening the door for creative applications that go beyond replacing synthetic dyes. The challenge and opportunity lie in turning clean-label demands into products that surprise, delight, and inspire confidence.ft
