A Flavorful 2025

Two food industry suppliers have shared consumer forecasts for the coming year.

 

2025 will be a year of embracing “the new human nature,” ADM predicts in its Flavor and Color Trends Report. The report examines four trends driving consumers’ choices, identifying the flavors and colors that will provide opportunities to appeal to consumers with unique sensorial experiences that capture seemingly contradictory desires for the past and future, along with evolving needs for wellness, affordability, and personalization.

Revisit & Reinvent. This trend focuses on the power of human memories and shared experiences coupled with the fact that new generations are experiencing classic tastes and colors for the first time.

Adaptive Eating. Consumers are tailoring their consumption moments to improve the quality of their health, adapt to changing economic or environmental concerns, and to fulfill human needs for satisfaction from foods and beverages.

Euphoric Wellness. Flavors and colors are interconnected with human moods and emotions.

Made for [You]. Sparking human curiosity and creating meaningful moments leads to positivity and personal joy through exploring unexpected and personalized foods and beverages, brought to life through vibrant flavors and colors.

FlavorSum offers its consumer insights in a two-part blog series. In part one, FlavorSum examines the cultural shifts that affect how people interact with foods and beverages. Key themes include “The Return of the Home Hub,” “The Creator Economy Expands to Food and Beverage,” “Food Activism Sparks Change,” and “Nostalgia Grows Up.”

Part two investigates how flavors can help food and beverage formulators create desirable experiences. Flavor themes include the following: “Seeking Serenity” (honey, matcha, hazelnut Parmesan, melon blends, pistachio); “Premium, Please” (Asian pear, pandan, green apple, cinnamon bun, cookies and cream, clove, pumpkin); “Tell Me a Story” (sour cherry, Vietnamese coffee, carrot cake, banana pudding); and “Meet Me in the Moment” (açai, cobbler, feta cheese, saffron, miso, prickly pear).

MartinBauer formally introduced Michael Wagner as its new chief executive officer in North America. The succession is part of a leadership change within the group that has seen Anne Wedel-Klein appointed as its nature network CEO.

DSI Dantech has acquired GEA’s North American Freezing Business, which constitutes a significant milestone in becoming GEA’s North American partner for both new freezer sales and aftermarket services.

Bühler partnered with Malt Handling to support small- and medium-sized breweries across North America, providing technology and process expertise. As an authorized reseller, Malt Handling will bring Bühler’s market-leading equipment to brewers who are creating unique products for the craft brewing and distilling industries.

Parry Nutraceuticals has been issued a European Union import license for organic spirulina, the first to be granted to an Indian company in nearly two years. Parry Nutraceuticals has invested in research and development and will reenter the European market with new, improved versions of its organic spirulina powders and tablets.

Ohly will open a new spray-drying tower and state-of-the-art fermentation facility in Hamburg, Germany, in 2025. The company has been delivering high-quality yeast extracts and yeast-based specialties from its base in Hamburg since 1836.

Vitalfood is a new entity that is set to become a reliable partner supplying bakery, fine pastry, dairy, nondairy, gelato, and ice cream companies. Italcanditi and CSM Ingredients joined forces to create this pan-European brand specializing in the supply of fruit-based preparations, hydrated creams, and candied fruit.

Prinova Aromas, a division of the NAGASE Group, has transformed its New Jersey facility over the past two years, streamlining logistics operations, enhancing essential oil processing, and centralizing global R&D,  regulatory, and quality functions with newly commissioned state-of-the art laboratories. The facility became fully operational in September 2024.

Tate & Lyle and Manus announced a strategic partnership, known as The Natural Sweetener Alliance, to expand access to natural sugar reduction solutions. The first ingredient to be jointly introduced is stevia Reb M, marking the first large-scale commercialization of an all-Americas sourced, manufactured, and bioconverted stevia Reb M ingredient.

Alianza Team, a global supplier of tailor-made solutions from lipids, fats, and oils, broke ground in October 2024 on its first U.S.–based site (a blending and finishing facility) in Goldsboro, N.C., in order to more effectively serve is North American customers.

Bay State Milling added Bay State Milling Montana to its portfolio. The acquisition is part of a strategic realignment that now includes 13 milling and processing facilities across the United States and Canada. Bay State Milling assumed full ownership of the facility after partnering with Montana Gluten Free for several years. The Montana facility handles SowNaked Mindfully Farmed Oats, a unique variety of non-GMO hulless oats with 40% more protein than traditional oats.

GNT added its first paprika emulsion to the plant-based EXBERRY color portfolio, enabling manufacturers to achieve clean label orange shades in a broad array of food applications. EXBERRY Shade Vivid Orange is a water-dispersible color made from non-GMO paprika. It has a high color intensity that allows for cost-effective low usage levels and can deliver bright shades in food products.

AQUALAB by Addium introduced SKALA Dry, an advanced software solution designed to enhance the capabilities of spray dryers, continuous lines, and other industrial dryers. SKALA Dry uses PLC temperature data to make intelligent set point adjustments before products leave the dryer, giving users significantly improved moisture control, less product variability, and more profit. The software is compatible with a wide range of dryers.

Innova-Q announced the launch of In-Q Knowledge Center for FDA Compliance, a new platform designed to streamline compliance for manufacturers and importers regulated by the U.S. Food and Drug Administration (FDA). Innova-Q’s mission is to modernize quality management through implementation of innovative, affordable, and pragmatic artificial intelligence tools. The In-Q Knowledge Center FDA Compliance Engine provides accurate, real-time FDA updates and comprehensive guidance to help users stay abreast of developments in an ever-changing regulatory landscape.

Strategy and brand firm MarketPlace created a new research storefront, under the brand Nextin Research by MarketPlace. Nextin Research is conducted and analyzed through the lens of MarketPlace’s engagement throughout the business-to-business commercialization and supply chain processes and through consumer markets. Kerry Group introduced WOW (World of Women’s Health), a comprehensive reference website that offers a deep dive into the unique health issues facing women at every life stage. With more than 100 human clinical studies published, more than $2 million invested annually in clinical studies, 400+ granted or pending patents on its ingredients, and four clinical studies on women’s health currently ongoing, Kerry is working to better understand the health and life cycles of women. The resources delve into the three most critical areas where Kerry is focusing: family planning, the hormone life cycle, and healthy living.

Bell Flavors & Fragrances revealed its Herbaceous Alchemy collection, which showcases the power of herbs, botanicals, spices, and florals in innovative floral experiences. The company will unveil its new menu at regional IFT Suppliers Expos across the country.
