The editors present a comprehensive overview of the biochemistry, biology, and handling of North American seafood resources, including not only well-known species of finfish, shellfish, crustaceans, and cephalopods, but also such rare species as turtles, alligators, and frogs. At nearly 1,000 pages, this handbook is intended to be an authoritative reference, being far too heavy to carry around in one’s briefcase.

All conceivable aspects of harvesting, processing, preservation, and handling are covered, as well as biological and chemical hazards sometimes associated with seafood products. However, coverage is rather limited to North American species, and there has been a rather obvious omission of aquaculture products. Excellent coverage is given to traditional by-products, such as fish meal and oil, as well as a number of other products, including gelatin, chitin/chitosan, seaweeds, with somewhat less-thorough coverage of marine bioactive compounds.

For the most part, this work accurately presents the current situation for processing and handling, but in some areas the information presented appears to be somewhat dated. Overall, it is a valuable reference addition to the library of anyone specializing in seafood scientific research, teaching, processing, or marketing. The figures and tables are clearly presented, and the text is well written.
