Along with papain, this protease is a suitable replacement for bromelain in food applications, which is significant because there is currently a global shortage of bromelain, a protease from pineapple. In food applications where bromelain is used as a processing aid, it is easy to swap out the enzyme for papain or ficin without making any label changes.
